Sweet, Savory and Spicy Meatballs

With the holiday season upon us many of us will be looking for dishes to bring to the many potlucks and office parties and gatherings that will surely fill up our calendars in the upcoming weeks. One of my favorite flavor profiles is the balance of sweet and spicy and these babies here are perfection!

These meatballs are sure to please a crowd and impress even the pickiest of eaters. Best of all, they are SUPER easy and quick to make. Add a side or salad and you've got your self a quick weekday meal.

Ingredients

  • 1 lb ground chuck
  • 1/2 a medium onion
  • 2 garlic cloves
  • 3 tsp oxtail seasoning
  • 1 tsp rosemary
  • 1 tsp paprika
  • 3 tsp red pepper flakes
  • 3 tbsp brown sugar
  • 3 tbsp shredded cheese (I used a fiesta mix, but any kind will do) 
  • 1 egg

1.  Small dice half an onion


2.  Mince 2 garlic cloves


3.  Add remaining ingredients and mix until well combined. I recommend using your hands.

4.  Roll out 12 equal medium sized balls and lay on oven safe dish. 


5.  Place in oven and bake @ 350F for 25 - 30 mins.

* One note about the oxtail seasoning. Although the name may indicate it's sole purpose in life is for seasoning the tails of oxen, BELIEVE me...this is a multipurpose seasoning. I've used it on chicken wings, shrimp, salmon, catfish, beef ribs, pork ribs....I could go on and on. You need this in your life.
